How old is your child? You might see if the school participates in Destination Imagination or First Lego League. My son also found great enjoyment from doing "backstage" work at his school and in the community for local drama productions....the kids built and painted sets, did sound/lighting work, etc...
lockmama offers great choices with the "Y" and park and rec. In addition, if your school doesn't offer any type of enrichment, talk to other parents and then the principal about creating an afterschool program. Our school didn't have one and now because of parents asking for it, we have everything from Mad Science, to cheerleading, to other activities. There are plenty of companies that will come in and teach or parents can volunteer to come in, too.
Our parks and rec department offers a variety of afterschool, weekend and summer programs relating to art. They have music classes, painting, drawing, and acting classes. If you can't find something your child is interested in at the school's afternoon program, you might look into the parks department or your local YMCA.
