I have 4 and 6 year old boys and keeping them busy and learning during the summer is a big priority for me.  I am studying to be a teacher myself so I have them "help mommy study" by practicing on them.  I make lessons and print outs about twice a week and we sit down and play school.  They love it and it keeps them in practice.  Also any trip we take becomes a learning experience too.  If we are going to the zoo, science center or beach we hit the library first.  We read through as many books about what we will see together.  Then while we are on vacation the kids love to talk about the things they have learned.  For my older boy he writes a "What I did over the summer" journal.  This way he will know what to share when school rolls around.  He started this when he was four and now my little one will do it this summer.  Before they can write and read they do this by cutting out pictures and keeping papers from where we go and then make their own books.

I'm trying to teach them that learning never stops and can be fun!  Sometimes it works out really well.
